When strawberry milk is much better than you remember it to be...

Is it just me, or is the jug of strawberry milk we used to buy at Safeway actually, really gross? All I can remember of any pre-flavored milks of yesteryear are the artificiality and the slimy texture. Who would have ever thought that flavored milks would become a trend?!

Enter the rise of drinks with things in them. Bubble tea, chè, and now, fruit milks. Fruit milks seem to be a popular item in South Korea, what with banana milk, mango milk, strawberry milk, and any fruits you can think of.

I’ve experimented with a couple of strawberry milks from bubble tea and dessert shops (Seattle’s Drive Thru Boba, LA’s MuMu Bakery & Cafe) and have looked at some other strawberry milks with my naked eye. There’s something still lackluster, even artificial, about these drinks on offer. Sorry for the criticism, but this is the one drink I can confidently say we can make miles better at home than any bubble tea shop. And the reason, I’m guessing, is that shops aren’t as willing to use as many fresh fruits as we are able to when doing this homemade.

Not only are we going to make fresh strawberry milk, we’re going to give it some dimension. Let’s give it a toasty edge by roasting the strawberries with some brown sugar! Sound good?!

Fresh Roasted Strawberry Milk

Ingredients

  • 1 pint of strawberries
  • 6 tablespoons dark brown sugar
  • 1.5 cups of filtered water
  • 10 ounces of a creamy premium milk. Lots of good options at Wholefoods NorCal, which sells Strauss cream top, Saint Benoit jersey, Maple Hill grass fed.

Instructions

  1. Pick off the stems and dice up the strawberries into almond-sized bits.
  2. Add the diced strawberries, sugar, and filtered water into a sauce pan.
  3. Place the pan on the stove-top on medium-high heat until it starts reaching a boil.
  4. Turn it down to medium heat and let the syrup reduce to the consistency of a maple syrup.
  5. Scoop about ⅓ - ½ of the concoction into a glass. Add some ice, and fill the rest with milk.
  6. If you’re going to use a straw, better to use a boba one! Get some plastic ones here if you’re hosting a big party, or better yet go eco and get these reusable stainless steel straws.
